Instant Cheese Rava Uttapam for Babies, Toddlers & Kids

Uttapam is another dosa variety from South India. Unlike dosa which is crisp and thin, uttapam is thick and soft like a pancake. Today I’m making a quick Uttapam using Rava or Sooji and this makes a great breakfast option for days when you have made no plans. This also serves as a great tea time snack or after school snack with less effort definitely.
The best part of recipe is this way we can feed vegetables to kids as per their choice and add more cheese or paneer to make it more nutritious. Feel free to add capsicum, cabbage or any of your kid’s favorite.
I’ve many pancake recipes on my blog and below are a few of them. Feel free to check them.

Ingredients
- Rava / Sooji - 1 cup
- Thick Curd / Yogurt - 3/4 cup
- Water - as needed
- Cheese - as needed
- Carrot - 1 grated
- Tomato - 1 chopped
- Onion - 1 chopped
- Chilly - 2
- Ginger Paste - 1/2 tsp
- Salt - as needed
Method
- Take rava or sooji in a bowl. Its good to use fine rava / chiroti rava. Add curd and little salt.
- Mix it well without lumps add a little water if required. Don't thin the mixture too much now. Close a lid and keep aside for 15-20 minutes.
- After 20 minutes you can add water and adjust the consistency to form a thick pancake like batter. we don't need a flowy batter here. If you have used normal thick rava you can run the mixture in a blender to form a smooth batter.
- In another bowl lets prepare for the topping of uttapam. I'm using carrot, tomato, onion, coriander, chilly and a little salt to keep this ready.
- Heat a pan and spread a spoonful of batter, try to keep it thick like a pancake. Add the topping and drizzle a little ghee or oil.
- Cover with a lid and cook uttapam. After a while flip and cook on the other side too.
- Flip again and top it with cheese. Serve it hot.
- Instant Sooji Rava Uttapam is ready to be served.
