Spinach/Palak is one of the superfoods generally used in many of the kid’s recipes due to its high nutritional content. In this recipe, I’ve tried to include spinach in a very interesting way. This can be made quickly with minimal ingredients and minimal effort. This can be given to babies post a year as honey is not recommended till then. I would like to mention this recipe includes eggs.

Sweet Spinach Muffins – Sugarfree Finger Food for Toddlers & Kids

The sweetness from honey and nutrition from Spinach this Sweet Spinach Muffins Recipe is easy to prepare and tasty too. Sweet Spinach Muffins is great for toddlers and kids as finger food as it's easy to hold and non-messy.

Ingredients

Wet Ingredients:

  1. Spinach – 170 gms
  2. Banana – 1 large ripened
  3. Milk – 1cup
  4. Honey – ½ cup
  5. Egg – 1 large
  6. Vanilla – 1 tsp
  7. Butter – ½ cup unsalted

Dry Ingredients

  1. Wheat Flour – 1 cup
  2. Sprouted Health Mix – 1 cup
  3. Baking Soda – 1 tsp
  4. Baking Powder – 1 tsp
  5. Cinnamon Powder – 1 tsp

Method

  1. First, take the fresh Palak/ Spinach leaves and rinse them thoroughly. Chop it roughly, add this to the mixer. Skip chopping if you are using baby spinach. Add melted butter to the same blender jar.
  2. To this add 2 whole eggs or 1 large egg and add half a cup of honey. I have used honey which is a natural sweetener instead of sugar which makes it sugar-free muffins.
  3. Add 1 whole large ripened banana, a cup of milk, and a tsp of vanilla essence to the mixer jar. Banana also adds sweetness and taste to the muffins.
  4. Grind the mixture to a fine texture and keep it aside. In another glass bowl take wheat flour.
  5. To the wheat flour add multigrain mix – Sprouted SathuMultgrain which makes our Muffins super nutritious.  Add baking soda, baking powder, and cinnamon powder of tsp each. Don’t miss cinnamon powder to add as this will enhance the taste of muffins. Start sieving the mixture.
  6. Sieve the dry ingredients mixture 3 – 4 times so that air is filled and muffins come our fluffy. This is needed as we are not using Maida but whole wheat.
  7. Add the spinach puree to this dry mixture; mix it gently without any lump. Do not use a whisk etc, use a folding method that we usually do while preparing the batter for baking.
  8. Now, keep the muffin tray ready with the parchment paper. To this add the Muffin batter. Bake it for around 20 minutes at 180 degrees.
  9. Sweet Spinach Muffins is ready to be served.
