I and family visited Yercaud, a Hill Station near Salem, last year. I happened to eat a yummy recipe which was something close to what I’ve made here today. Grilled Tomato I could see and some beans along with it and it was truly eye-catching and tasty. One Sunday I gave a thought of trying it in my kitchen and here is the outcome I’m sharing with you all today.

This recipe makes a great party snack or starter and kids would definitely love it for its appeal. Anything baked is well-received these days for it adding on a health quotient, less or zero oil. Why Rajma or Kidney Beans for Kids? The nutritional benefits of Rajma are versatile. It’s rich in Iron, Vitamins and it’s good for increasing immunity. It’s a very famous ingredient in North Indian Kitchen. Very versatile as it goes with multiple masalas and dishes.

Tomato Rajma Bites for Kids and Family

A great party snack or starter for kids who love to eat new recipes. Tomato Rajma Bites is an easy to make healthy snack option.

Ingredients

Grilled Tomato :

  1. Tomato - 10
  2. Olive Oil - 2 tsp
  3. Garlic - 10 minced or grated
  4. Pepper Powder - 1 tsp
  5. Salt - 1 tsp
  6. Oregano/Basil - optional

Rajma Masala :

  1. Soaked Rajma - 200 gms
  2. Tomato - 5 medium 
  3. Butter - 2 tbsp
  4. Pepper Powder - 1 tsp
  5. Italian Seasoning - 1 1/2 tsp
  6. Chilli Flakes - 1 1/2 tsp
  7. Salt - 1 1/2 tsp

Method

  1. In a saucepan or pressure cooker take 5 tomatos and cook it to make puree. In another pan or cooker add soaked Rajma and salt and cook it for about 3-4 whistles
  2. Meanwhile chop tomato half, like cups, and deseed them and keep aside. In a baking tray place a parchment paper, line cut and deeseded tomatoes. Sprinkle olive oil on each tomato, add little minced garlic. Later sprinkle pepper powder, salt and Oregano / Basil.
  3. In a preheated oven grill the tomato cups for about 20-30 minutes at 200 degree Centigrade. In a kadai or a pan add butter, followed by cooked, de-skinned and pureed tomato. 
  4. Add pepper powder, salt, chilli flakes and italian seasoning ( You can use free sachets given at Pizza hut or Domino's). Mix all the ingredients together and close the lid to cook it for another 5 minutes. Add cooked Rajma or Kidney Beans, mix, close the lid and cook for another 5 minutes. Our Rajma Masala is ready. Don't forget to adjust the spice according to kids or adults need.
  5. By now our Tomato Cups would be grilled well and ready. Take them to a plate, fill Rajma Masala into it and serve. Drizzle a bit more herbs on it if you feel essential.
  6. Tomato Rajma Bites are ready to be served.
