Puttu is Kerala’s specialty. On one of my trips to Wayanad in Kerala, I tried both Spicy Puttu and Jaggery Puttu. Loved both and tried both at home. Today I’m sharing a simple and easy recipe of Jaggery Puttu which can make a great snack option for toddlers and kids. This can also be packed as their lunch/snack box as it tastes better even when it’s not hot.

Jaggery Puttu with Red Rice

Today I'm sharing a simple and easy recipe of Jaggery Puttu which can make a great snack option for toddlers and kids. This can also be packed as their lunch/snack box as it tastes better even when its not hot.

Ingredients

  1. Red Rice Puttu Powder - 1 cup
  2. Salt - 1/2 tsp
  3. Hot Water - as needed
  4. Jaggery - 3/4 cup pounded or powdered
  5. Cashewnuts - as needed
  6. Coconut - 1/4 cup
  7. Ghee - 4 tsp
  8. Cardamom Powder - a pinch

Method

  1. Take red rice puttu powder (available at stores). Add a little salt to it and mix well.
  2. Now add hot water as much as you can bear little by little and keep mixing it to form crumble like texture.
  3. When we mould it in hands it should come together.
  4.  Fill the prepared puttu mixture in Puttu maker. Alternatively, this can also be steamed in idli stand for 10-15 minutes.
  5. If you are using puttu maker, another vessel is given along with it to create a steamer, boil the water and place the puttu stand inside the vessel in which we have put the puttu powder.
  6. After about 10 - 15 mins, steam is released, and keep this aside. Ensure to complete this step so that puttu is cooked well. Organic Jaggery Powder is available at our stores too.
  7. Now take jaggery in a vessel and add water to melt the jaggery. Once done strain to remove the impurities.
  8. Take the same mixture and add it to another vessel, let this jaggery water boil for another 5 minutes. Jaggery Syrup is now ready, keep this aside.
  9. In a pan add ghee and some broken cashew nuts, fry it till golden brown. Transfer this to a bowl.
  10. Now again add some ghee and add freshly grated coconut this gives a special taste to puttu. You can also add dry coconut. Fry coconut until golden brown. Keep this aside in a bowl.
  11. Now transfer the steamed puttu to a bowl, add fried coconut, fried cashew nuts, a pinch of cardamom powder, and prepared jaggery syrup as needed. Mix well and serve. Healthy and tasty Jaggery Puttu is ready to be served for your kids.

Method of making Jaggery Puttu with Red Rice
