Ingredients
1. Jaggery - 250 gms
2. Water - 2 tbsp + 1 cup
Method
1. Take 250 grams of crushed Jaggery and transfer it to a thick bottom pan. Just add 2 tbsp of water.
2. On a medium flame, just melt the jaggery. Immediately sieve it to another pan.
3. Add 1 cup water and bring the mixture to boil. Ensure that you don't overcook it or bring it to a string consistency which shall form a solid when cooled. You will have to just bring it to a boil. Put on heat for 2 more minutes and switch off the flame. Once cooled it should look like below, like a syrup.
4. Jaggery Syrup is ready to be served.

I think jaggery is the best alternative for refined sugar.. i need to try this recipe i add jaggery in my sons diet but never tried the syrup
Jaggery is a healthy version and recommended to increase haemoglobin and not that refined version which is not good otherwise also.
I give jaggery to my kids specially during winters. It helps keep infections of the throat at bay too.

Jaggery is surely healthier than sugar. I prefer jaggery over sugar but never gave it to my kids when they were small. But this syrup sounds good as this way all impurities are removed too.
