• Ensure to buy organic mushrooms.
• Always buy fresh mushrooms. If buying packed mushrooms from a store, pick ones that were delivered the same day.
• Good mushrooms are dry and do not have cracks.
• The “gills” (the underside of the cap) should be brown or pinkish. Do not pick one with black gills.
• If they are not packed in plastic, you should be able to smell them. There should be little to no smell. If it smells musty, do not pick it.
• Avoid canned mushrooms as it will contain preservatives.

Ingredients
- Oil - 2 tbsp
- Onion - 1 chopped
- Cumin - 1 tsp
- Mushroom - 10 sliced
- Eggs - 3
- Pepper powder - 1 tsp
- Chilli powder - 1 tsp
- Salt - 2 tsp
- Coriander leaves - as needed
Method
- Take a wide thick bottom pan, add oil once it's hot add cumin seeds.
- To this add chopped onions and saute it for a while.
- Add thinly sliced mushroom, fry for about 2 minutes, and close it with a lid, allow it to cook for about 5 - 7 minutes.
- Now open the lid add 1 tsp Chilli powder to this.
- Also, add Pepper powder and salt as per the taste cooked mushrooms.
- After adding all the spices, saute the mixture for a while and add beaten eggs to this.
- Stir this mixture continuously, otherwise, it will get stuck to the bottom of the pan.
- Add finely chopped coriander leaves, mushroom scrambled egg is ready to be served.

Method of making Mushroom Scrambled Egg :
1. Take a wide thick bottom pan, add oil once it’s hot add cumin seeds.

2. To this add chopped onions and saute it for a while.

3. Add thinly sliced mushroom, fry for about 2 minutes, and close it with a lid, allow it to cook for about 5 – 7 minutes.

4. Now open the lid add 1 tsp Chilli powder to this.

5. Also, add Pepper powder and salt as per the taste to the cooked mushrooms.

6. After adding all the spices, saute the mixture for a while and add beaten eggs to this.

7. Stir this mixture continuously, otherwise, it will get stuck to the bottom of the pan.

8. Add finely chopped coriander leaves, mushroom scrambled egg is ready to be served.

Note:
• No salt and sugar for babies below 1 year.
• Mushrooms can be stored safely for up to a week in a refrigerator.
• Store them in a paper bag in the fridge or on a tray with a paper towel over it.
• Do not keep them in an air-tight plastic bag.
When preparing mushrooms, do not soak them in water, as it will lose its flavor. Simply rinse it off quickly or even better, wipe with a damp cloth.
