Instant Dates Moongdal Halwa | Zero Sugar or Jaggery Recipe

Amongst my favorite desserts this North Indian traditional halwa ranks top. I’ve lived few years of my childhood in North India and my mother being a South Indian has grabbed many such recipe learnings during our stay there. Be it Holi, Diwali or any wedding this healthy dessert is never missed being made. And on the urge to make it healthy and suitable for babies who are denied sugar till an year, I’ve made this using Dates and Raisins.

Dates and Raisins act as a sweetener in this Zero Sugar or No Jaggery Recipe making it a comfortable dessert for babies. If you feel the taste of Dates is heavy for someone who’s used to sugar you can either make it half sugar half dates or completely with sugar with the same measurements. Moongdal helps the body keep cool during summers and Dates fill in for the most needed energy requirement. Instant Dates Moongdal Halwa has another delight that it doesn’t need to be planned a day before. Skipping 6 hours of soaking time I have made this whole recipe in 30-40 minutes.

Instant Dates Moongdal Halwa

Ingredients
- Moongdal - 1/2 cup
- Ghee - 1/4 cup + 2 tsp
- Raisins - 20
- Dates - 10
- Water - 1 cup
- Milk - 2 cups Full Cream
- Kesar / Saffron - 5 strands
- Cardamom Powder - 1 pinch
- Almond - 5 chopped
- Pista - 5 chopped
- Cashewnuts - 10 chopped
Method
1.Take bowl and add water. Boil well, switch off the flame and add Raisins and chopped Soft Dates and rest aside to soak for a while.
2. After 15-20 minutes you can puree the dates and raisins mixture. Soak kesar strands in milk prior.
3. Take a pan and add Moongdal and dry roast it for about 10 minutes until it changes the color a bit. Keep mixing without stopping so that all the moong are well roasted and crisp.
4. Once roasted, cool in a plate and powder the mixture little coarse. Don't make a fine powder. In the same pan add a tsp of Ghee, when hot add all the chopped dry fruits - Pista, Almond and Cashewnuts.
5. Fry the dry fruits till they smell nice and change the color a bit. Add ghee again and heat it.
6. Add powdered roasted moongdal and keep stirring it until the mixture leaves oil on the sides and smells heavenly.
7. Once it thickens add Milk, followed by Dates and Raisins puree and kesar strands soaked in milk and give the mixture a gentle stirr. Keep stirring until the mixture forms a thick shiny halwa.
8. Once well cooked add fried Dry Fruits and mix and serve hot or refrigerate few hours and serve chilled.
