Oats & Ragi Muffins for Toddlers & Kids

Oats, Sprouted Ragi Powder and Whole Wheat are the 3 flours I’ve used here along with Banana and Coconut sugar as sweeteners. Being a huge fan of millets I always like to try my hands in using them in regular recipes and when it came to baking I did not hesitate to try using them anytime. Having a pre-schooler at home I wanted to try another nutritious muffin to her snackbox and I’m glad it turned out delicious.
This recipe can be followed to make Sugarless Multigrain Muffin by just skipping coconut sugar at the end. I’ve tried it that way and it turns out tasty too, just lighter on sweetness. This way you can give these muffins to babies too as a finger food.

Oats & Ragi Muffins for Toddlers & Kids

Ingredients
- Oats - 1 cup powdered
- Sprouted Ragi Powder - 1/2 cup
- Wheat Flour - 1/2 cup
- Ripe Banana - 3 big
- Curd - 1 1/2 cup
- Oil - 1/4 cup
- Baking Soda - 1/2 tsp
- Baking Powder - 1/2 tsp
- Cinnamon Powder - 2 tsp
- Nuts - as needed
- Coconut Sugar - 1/2 cup
Method
- Take bananas in a bowl and mash it.
- In another big bowl take Oats powder. In a sift add sprouted ragi powder, wheat flour, baking soda, baking powder, cinnamon powder and sift all ingredients together.
- Mix all the dry ingredients and add mashed banana and curd.
- Add oil and mix all the ingredients gently.
- Add nuts as required and the mixture is ready to bake for a sugarless version. For extra sweetness add Coconut Sugar or same amount of sugar powder.
- Mix all the ingredients and pour spoonful each to muffin liners lined in a baking tray.
- Top the muffin mix with more nuts if needed and its ready to bake. In a pre-heated oven bake it for 15-20 minutes.
- Eggless Oats & Ragi Muffins are ready to be relished.

Method of making Oats & Ragi Muffins

Note :
1. You can use regular ragi flour if you do not have sprouted ragi powder.
2. The baking temperature may vary from oven to oven hence keep a watch.
3. Every flour varies, hence if you feel the batter is too thick or thin adjust using curd. The muffin batter should be thicker like idli batter.
