The sprouting process makes it nutritionally superior to the non-sprouted; this makes it easily absorbable and digestible. Sprouted and ground moong makes the paratha crispier. Sprouted Moong Paratha is a happy-go-lucky food to carry along during travel with your toddlers.
Let’s jump into the detailed Recipe…
Procedure
1. Take a clean bowl and add 2 cups of Whole Wheat Flour
2. Add water little by little and make a soft dough
3. Add oil and knead a bit more
4. Rest the dough for 20 minutes and it would be ready to use.
5. Take sprouted moong in a mixer and add ginger and make a coarse paste
6. Heat a pan and add oil
7. Add Jeera and Ajwain/Omam seeds/Oregano and allow it to splutter
8. Add coriander powder, chilly powder, turmeric followed by Sprouts paste
9. Add salt and fry the mixture till it forms a dough-like consistency.
10. Cool the mixture and add Fresh coriander leaves
11. Take small balls of Dough prepared stuff the masala neatly and roll it into thin or thick parathas as required.
12. On a heated tawa cook the Paratha on both sides adding ghee or oil as required
13. Serve the parathas with curd or pickle
