Black Eyed Peas or Lobia Salad | Cowpeas Recipes

Soft cooked cowpeas or lobia with paneer and some fresh vegetables – topped with chili flakes and mixed herbs in Black Eyed Peas or Lobia Salad, is one of the easiest protein-rich salad you can make for busy mornings. While dieting if you need a fulfilling breakfast then this recipe is apt for you.
My salad love these days helps me explore lots of varieties and I’m glad this one turned out super tasty. Just cooked Cowpeas or Lobia with a drizzle of pepper can be a great finger food option too.

Black Eyed Peas or Lobia Salad | Cowpeas Recipes

Ingredients
- Black Eyed Peas – 1 cup cooked
- Paneer - 100 gms
- Cucumber – ½ chopped
- Capsicum – ½ chopped
- Onion – 1 sliced
- Coriander – little
- Ginger Garlic Paste – ½ tsp
- Chilli Flakes – 2 tsp
- Mixed Herbs – 2 tsp
- Chilli Powder – optional
- Lemon – ½
- Olive Oil – 2 tbsp
- Salt – As needed
Method
- Wash the Lobia or Black Eyed Peas thoroughly and soak it for about 2 – 3 hours. Rinse, wash, and add some salt and water to pressure cook it.
- Pressure cook the Cowpeas for 2- 3 whistles and filter the excess water if any, transfer this to a bowl. If you do not want it too soft, cook it only for 1 whistle post soaking.
- Take a pan, add some ghee, and toss the paneer and keep it aside. Paneer is a tasty addition to any salad. Tossing it in ghee adds to the taste but you can skip it too.
- Take a wide bowl. Add cooked black-eyed peas followed by chopped cucumber.
- Add chopped capsicum, onion, and ½ tsp of ginger garlic paste.
- To this add Mixed Herbs, Chilli Flakes, and Chilli powder. If you are making for kids you can skip or customize these as per taste. Add a little amount of salt now too.
- Dress the salad with olive oil. Add tossed paneer, chopped coriander leaves too.
- To this mixture for the tangy taste squeeze half a lemon and mix it well.
- Lobia Salad / Cowpeas / Black Eyed Peas is ready to be served. This can be served as a morning breakfast or a snack for toddlers.

Method of making Black Eyed Peas Salad
