Foxtail Millet Pulao – Vitamin & Fiber Rich Breakfast
Foxtail Millet Pulao - Vitamin & Fiber Rich Breakfast

Ingredients
- Oil - 2 tbsp
- Mustard Seeds - 1 tsp
- Cinnamon - 2 inch
- Cardamom - 2
- Clove - 4
- Onion - 2 (finely chopped)
- Tomato - 2 (finely chopped)
- Methi leaves - 1 cup
- Mint leaves - 1 cup
- Carrot - 2
- Peas - 1 cup
- Beans - 1 cup
- Potato - 1
- Foxtail Millet - 2 cup (Soaked)
- Water - 4 cup
- Salt - 2 tbsp
- Lemon - ½
- Ghee - 1 tbsp
Masala :
- Coconut grated - 2 tbsp
- Ginger - 1 inch
- Garlic - 5 pods
- Green Chilly - 3
- Coriander powder - 1 tbsp
Method
- Take a thick bottom large kadai or pressure cooker heat oil and saute mustard seeds, cinamon, cardamom and clove, saute until spices turn aromatic.
- Now add chopped onion, chopped methi leaves, mint leaves and ensure everything is fried well.
- To this add chopped vegetables and chopped tomato, saute until this turns soft and mushy.
- Prepare masala by adding grated coconut, green chilli, ginger, garlic, coriander powder, spices like cinnamon and cardamom in a mixer grinder.
- Add the prepared masala saute for a few seconds, then add foxtail millet and saute for a few more minutes.
- Now add in some water, salt as per your taste, grated coconut, lemon juice and cook for 10 minutes.
- After 10 minutes add some ghee, give it a quick mix and cook for 10 more minutes.
- Finally enjoy Foxtail Millet Pulao with some raita.
