Sugarless Homemade Chyawanprash – Ayurvedic Immunity Booster

Chyawanprash made with Indian Gooseberries and its commercial advertisements used to be so regular on our Television Channels during the 80s and 90s. Even today we can spot one ad daily. Named after the old sage Chyawan who is the first person to prepare this formulation, this amazing mixture is known to have rejuvenated youthfulness. It is this sage who is the reason behind the wonderful immunity booster Chyawanprash also known as Chyavanaprasha, chyavanaprasam or chywanprash rasayana.

Homemade Chyawanprash - Ayurvedic Immunity Booster
Author:Kavitha Prashanth
Recipe Type: Health Supplement, Immunity Booster Food
Cuisine:Indian

Ingredients
- Gooseberry or Amla – 250gm
- Dates – 20 Nos. Soaked for 15 mins.
- Jaggery – ½ Cup
- Ghee – 2 Tbsp
To make Spice Powder:
- Pepper – 10 Corns
- Dry Ginger – ½ inch
- Nutmeg Powder – 1 tsp
- Fennel Seeds – ½ Tbsp
- Bay leaf – 1
- Cardamom – 3
- Saffron – 5 strands
To make Dry Fruits powder / Nuts powder (optional)
- Cashewnuts – 10
- Almonds – 10
- Pista – 5
Method
- In a pressure cooker add the gooseberries, little water and close the lid. Make small cuts in the gooseberry to help it cook quickly. Wait till 2 whistles. Switch off the flame and allow the pressure to release by cooling for a while.
- While its cooking lets make the Spice powder by blending all the ingredients to a fine powder. Also, you can keep ready the optional(but important) Nuts Powder which can be made by blending all the dry fruits to a fine/coarse powder or paste. Do not worry about the texture of Nuts Powder as we are anyways going to add it to the Chyawanprash paste.
- By now the Gooseberries are cooked and pressure released. Strain the excess water and deseed the cooked Amla or Indian Gooseberry. Transfer it to a blender jar. Blend to a fine paste by adding little water. I've used Wonderchef Blender jar here.
- To sweeten up take the soaked dates in a blender and blend well to make a fine paste.
- Now in a pan, add ghee, ground Amla / Gooseberry paste, Dates puree and mix well. Keep stirring until you see a glaze texture. This may take about 3-5 minutes.
- Now add Organic Jaggery, Spice powder, Nuts powder and mix well. You can buy Dry Fruits Powder or Assorted Nuts Powder here. Adding nuts powder will increase the nutrition value of Chyawanprash and hence best suggested.
- Finally cook the mixture for around 10-15 minutes depending on the thickness of the mixture, until you see a thick mass formed.
- Allow the mixture to cool and transfer to an air tight glass jar. This Homemade Chyawanprash can be stored 3-4 weeks when refrigerated. Homemade Chyawanprash is ready.
