On our blog, we have Millet Dosa, Millet Fried Rice, Millet Kheer, Millet Khichdi, Millet Bhaath too. Once I tried these after knowing the benefits, there’s never been a look back. I try to include the varieties of millets in my daily recipes at least 3 times a week and I’m glad I’m successful at that which includes convincing my family to eat them without any fuss.

I’ve used Foxtail Millet here, but this recipe goes well with millets like Barnyard Millet, Kodo Millet, and Little Millet too. The taste is divine and my preschooler loved it much. As it’s summer you can chill it and serve. I’ve pan-cooked millet here you can pressure cook it for 3 whistles to make the kheer quickly. It is not easy to switch to a new form of food, but it’s always good to do it at the right time without you being forced to do it when your health condition asks for it. So take this small step along with me to introduce your family to the goodness of millets if you have not done it yet.

Millet Kheer or Paayasam

A tasty kheer to curb hunger pangs during this summer with the goodness of millets. This makes a super creamy kheer which will be loved by little ones

Ingredients

  1. Foxtail Millet - 1/2 cup
  2. Water - 2 cups
  3. Milk - 3/4 cup
  4. Ghee - 2 tsp
  5. Sugar - 1 cup
  6. Kesar - 10 strands
  7. Cashew - 10
  8. Almond - 5
  9. Raisins - 10

Method

  1. Take Millet in a bowl, rinse it twice to remove the impurities and add it to a wide pan and cook it for 20 minutes on medium flame. Strain if there is any excess water and keep aside. You can even pressure cook it for 3 whistles.
  2. In a thick bottom add ghee and all dried fruits. Roast them for 2 minutes and keep aside in a bowl. To the same bowl add milk and sugar.
  3. Add kesar or saffron strands followed by little cardamom powder mix well and bring the mixture to a good boil. Add cooked millet, mix and cook for 2 more minutes.
  4. Add fried nuts, mix and serve. Refrigerate it for a while and serve chilled for better taste.
  5. Millet Kheer is ready to be served.
