Rice Halwa with Coconut Sugar is a healthy and delicious dessert perfect for babies, toddlers, and kids. This Indian dessert is not only easy to make but also packed with nutrients. This time to make rice halwa I’ve used coconut sugar. You can make the same with normal jaggery, palm jaggery, or even with regular sugar. Most of the Indian festive recipes use jaggery and its varieties for the same reason.

Rice Halwa with Coconut Sugar

Instant Rice Halwa with coconut sugar makes for a great healthy dessert option when the craving is instant.

Ingredients

  1. Rice - 1 cup cooked
  2. Coconut Sugar - 1/2 cup
  3. Ghee - 2 tbsp
  4. Almonds - few chopped
  5. Cashewnuts - few chopped
  6. Dry Coconut - 1 tbsp
  7. Cardamom Powder - a pinch

Method

  1. Take a pan and heat little ghee. Add almonds and cashewnuts and fry them till golden brown and take it out in a bowl for further use. In the same pan add cooked rice.
  2. Add ghee and fry the mixture on low flame for 5 minutes.
  3. Take the fried rice add 2 tbsp milk and grind into a smooth paste. Add more milk if needed.
  4. Transfer the grind rice to the same pan and add normal sugar or coconut sugar. Stir well and mix to see the texture as below while the sugar or jaggery dissolves well to the mixture. This may take about 4 to 5 minutes.
  5.  Later add grated dry coconut and fried nuts to this mixture and mix again well.
  6. Rice Halwa with Coconut Sugar is ready to be served
