Ingredients

  1. Egg – 2
  2. Milk – ½ liter
  3. Jaggery Powder – ½ cup
  4. Vanilla Essence – Optional ½ tsp
  5. Rice Flour/ Kerala Banana Powder – 1 ½ tbsp

Method

  1. In a wide bowl, add 2 eggs, jaggery powder, and vanilla essence. Whisk it until soft.
  2. Add some milk and mix again. I am adding Kerala Banana Powder in the place of flour, to the custard mixture. Alternatively, you can also use Rice Flour/ Wheat/ Maida or any flour of your choice.
  3. Whisk the mixture well, strain the mixture to pan where this will be kept on the stovetop.
  4. Stir it continuously with a spatula in low flame, otherwise, eggs would scramble quickly. This is a very important step while preparing the custard.
  5. After refrigerating the mixture for 3-4 hours, Egg Custard with Jaggery is ready to be served.
