Sweet Potato Pancake for Babies and Kids – 2 Ingredient Finger Food

Sweet Potatoes make a very healthy baby food. The versatility of this to adapt to any type of food makes it easier for us to include baby-friendly foods. We can make purees from pancakes to dosas using this Sweet Potato. Today using only 2 ingredients I’m making Sweet Potato Pancake for babies and kids which makes a great finger food option due to its soft chewable texture.
Sweet Potatoes are rich in Vitamin A, Calcium, and Folate. Just like Sweet Potatoes, eggs to are healthy weight-gaining foods. The proteins in eggs stimulate the growth of babies helping them achieve ideal milestones. The combination makes healthy, yummy, and soft pancakes for babies. This also makes a great snack option for toddlers and kids.
Can be given to 8 months+. Ensure to add only egg yolk to baby and whole egg can be added 1 year +

Sweet Potato Pancake for Babies and Kids – Finger food Recipe
Sweet Potato Pancake for Babies and Kids - 2 Ingredient Finger Food

Ingredients
- Sweet Potato - 200 gm
- Egg - 2
- Cinnamon Powder - a pinch (optional)
Method
- In a pressure cooker, take washed sweet potato and add water.
- Pressure cook for 2-3 whistles or pan cook for 15 minutes
- Allow to cool down, open and remove the skin
- Transfer to a neat bowl and mash it with the help of a fork
- Now add Cinnamon Powder (optional) / Cardamom Powder and two whole eggs
- If you are making this for babies, you can add only egg yolk
- On a tawa, spread some ghee/butter and pour out small portions to make pan cakes
- Cook them on both sides by drizzling ghee on a low flame for 2-3 minutes
- Sweet Potato Pancake can now be served with honey or chocolate sauce

Method to make Sweet Potato Pancake :

5. Now add Cinnamon Powder (optional) / Cardamom Powder and two whole eggs
6. If you are making this for babies, you can add only egg yolk
7. Whisk well to form a pancake batter
8. On a Tawa, spread some ghee/butter and pour out small portions to make pan cakes
9. Cook them on both sides by drizzling ghee on a low flame for 2-3 minutes
10. Sweet Potato Pancake can now be served with honey or chocolate sauce

Note: To make this recipe eggless you can use Kerala Banana Powder or wheat flour for babies.
