Vegetable Poha for Toddlers & Kids makes for a delicious and nutritious morning breakfast. Early morning breakfast needs to be nutritious especially for kids who will be heading to school and have to be on their toes in the first session. For a parent, it cannot be a tedious one making it a too time-consuming dish and hence I am always on the go of trying new recipes which take less time and keep all the required nutrition facts considered.
A great combination of vegetables and paneer along with Poha and some easily available spices goes well for the lunchbox too. You can also tweak this recipe a bit and make this likable for your family. I would recommend you try this with different vegetables, sprouts, or soaked pulses. You can give this to 10 months plus babies who are learning to eat on their own minus salt.

Vegetable Poha for Toddlers & Kids

Ingredients
- Poha - 2 cup
- Paneer - 100 gms
- Carrot - 2
- Peas - 1/4 cup
- Potato - 1 medium
- Onion - 2 sliced
- Chilly Powder - 1/2 tbsp
- Turmeric Powder - A pinch
- Garam Masala - 2 tsp
- Salt - As needed
- Coriander Leaves
Method
- In a bowl add 2 cups of Poha/Beaten Rice, wash and rinse once - filter all the water from Poha and rest it for 10 minutes
- In a pan pour 1\4 cup of oil, once is the oil is heated put curry leaves for spluttering, add chopped onions, fry it for some time and add all the vegetables kept - peas, carrot, potato. You can also add sprouted cereals if required.
- Close the lid for 2 -3 minutes and allow the vegetables to cook. In between just open the lid and check whether the vegetables are cooked or not.
- Now, add chilly powder, garam masala powder, turmeric powder, and salt as needed.
- Finally, add paneer and mix gently, and then Poha to mix well. Garnish with coriander leaves at the end.
- Vegetable Paneer Poha is ready to be served.
P.S: If you find the paneer is a bit hard then put them in hot water for about 2 minutes and soak it well, it becomes soft.
