Ingredients
Roasted Veggie Salad
- Veggies of your choice
- Greens of your choice
- Salt & Pepper
- Olive oil
Almond Dressing
- Soaked almonds
- Green Chilly - less than half
- Salt
- Lemon
- Water
Method
Roasted Veggie Salad
- Cut the veggies of your choice into slices, spread them on a baking tray and spread some olive oil.
- Sprinkle some salt and pepper.
- Mix well and bake in a preheated oven until roasted at 220 degrees and roasted for 30 minutes. Can be steamed as well.
- Add Avocado, Palak and Coriander, Roasted Veggies Salad with Almond Dressing is ready to serve.
Almond Dressing
- Take Soaked Almond and Green Chili in a blender.
- To this add salt, lemon juice, water and blend. Almond Dressing is ready to serve.
